Green Minestrone with Homemade Crackers
Ingredients

  • 1 tablespoon olive oil
  • 1-½ cups yellow onion, diced
  • 1 cup celery, diced
  • 1 tablespoon garlic, minced
  • 2-½ cups broccoli, chopped
  • 2 cups cabbage, sliced
  • 2 cups zucchini, diced
  • 1-½ cups kale, stems removed and sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon sea kosher salt
  • 1 teaspoon ground black pepper
  • 1 15-oz. can cannellini beans, drained and rinsed
  • 6 cups low-sodium chicken stock (or vegetable stock)
  • 1 ½ cup Farro, cooked
  • 1 cup unsweetened almond milk

  • 1 cup almond flour
  • ½ cup finely ground oats
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, finely chopped)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup cold unsalted butter, cut into small cubes
  • 2 to 4 tablespoons ice water
  • ¼ cup finely chopped nuts (such as almonds, walnuts, or pecans)
