  • 2 lbs. carrots peeled and diced in very fine pieces, or use matchstix carrots
  • ¾ cup granulated sugar
  • 1 ½ tsp. baking powder
  • 1 ½ tsp. vanilla extract
  • ½ tsp. cinnamon
  • 2 heaping tablespoonfuls all purpose gluten free flour or use regular flour
  • 3 large eggs beaten
  • ½ cup unsalted butter softened or melted (1 stick)
  • 2 tbsp. confectioners’ sugar
