  • 2 medium mangos, diced
  • 1 avocado, chopped
  • ⅓ cup unsweetened dried coconut
  • 1 bunch fresh parsley or cilantro, chopped
  • Additional lime wedges, to serve
  • 2 cups cooked brown rice, quinoa, or cauliflower rice
