Cashew Sauce

Ingredients
  • ½ cup raw cashews, soaked for 20 minutes or overnight
  • ¼ cup water
  • 1 very small garlic clove
  • 1 Tbsp miso paste
  • ¼ cup packed parsley leaves
  • 1 tablespoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon reduced-sodium tamari or soy sauce
  • ¼ teaspoon salt
  • 2 to 3 leaves of fresh sage (optional)
Steps
  1. Drain cashews.  Combine all ingredients in food processor and process until smooth.
Notes
  • Excellent in a Buddha bowl - quinoa, lentils, roasted veggies, red cabbage, carrots....... sprinkled with hemp seeds.  Possibilities are endless!
