Ingredients
  • 8 oz smoked gouda
  • 16 oz sharp cheddar cheese
  • 8 oz colby jack
  • 1 box elbow macaroni
  • 1 (or2) eggs
  • 2 cups evaporated milk
  • 1 cup whole milk
  • seasoning salt
  • 1 stick butter
  • ¾ c sour cream
  • salt & pepper to taste
  • 6 oz mozzarella
Steps
  1. Preheat 350
  2. Cut each cheese in half and shred one half, cubing the other half.
  3. Boil macaroni in well salted water according to package.
  4. Mix egg, milks, seasoned salt. Beat to make a smooth combined custard.
  5. Drain macaroni and place in large bowl. Add in butter and sour cream, stirring to coat all of the macaroni.
  6. Add all cubed and two handfuls of the shredded cheeses.
  7. Stir in the custard mix.
  8. Add a little salt & pepper if needed
  9. Pour half of macaroni mixter into ungreased baking dish.
  10. Sprinkle the mozzarella over that layer.
  11. Fill up with the rest. Spread out to lay top down. Top with remaining cheese.
  12. Loosely cover with foil
  13. Baked 350 for 20 min covered and 20 min uncovered
  14. if you don't have a crust on top, place under broil for a couple minutes.
