  • 2 pounds plums, pitted and chopped

  • ¾ cup light brown sugar
  • ¼ cup soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons grated fresh ginger
  • 2 cloves garlic
  • 1 teaspoon sea salt
  • subheading: For the Spice Mixture (highly recommended but see below for shortcut option):
  • 1 2 to 3 inch piece cinnamon stick
  • 2 whole star anise
  • 4 whole cloves
  • ½ teaspoon sichuan peppercorns (NOT the same thing as black pepper)
  • ¼ teaspoon whole fennel seeds
  • OR 1 teaspoon Chinese Five Spice Powder
