Ingredients
- subheading: Crust:
- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- ¼ cup granulated sugar

- 2 cups chopped fresh pineapple
- 2 eggs
- 1 cup granulated sugar
- 2 tbsp all-purpose flour
- ½ tsp baking powder
- ¼ cup shredded coconut
- 1 tsp vanilla extract
Steps
- subheading: Crust:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
- Mix melted butter, 1 cup flour, and ¼ cup sugar to form a dough. Press into the bottom of the prepared baking dish.
- Bake crust for 15 minutes, then remove and set aside.
- subheading: Filling:
- Combine eggs, 1 cup sugar, 2 tablespoons flour, baking powder, and vanilla in a bowl. Stir in pineapple and coconut.
- Pour filling over the baked crust and return to the oven.
- Bake for 25 to 30 minutes until the filling is set and lightly golden.
- Let cool in the pan, then cut into bars.
Notes
- I wonder if you could add a little brown sugar on top and put in broiler for a few minutes to caramelized it, and make like a pineapple upside down effect.
