Tropical Pineapple Bliss Bars

Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar

  • 2 cups chopped fresh pineapple
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • ½ tsp baking powder
  • ¼ cup shredded coconut
  • 1 tsp vanilla extract
Steps
  1. subheading: Crust:
  2. Preheat oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
  3. Mix melted butter, 1 cup flour, and ¼ cup sugar to form a dough. Press into the bottom of the prepared baking dish.
  4. Bake crust for 15 minutes, then remove and set aside.
  5. subheading: Filling:
  6. Combine eggs, 1 cup sugar, 2 tablespoons flour, baking powder, and vanilla in a bowl. Stir in pineapple and coconut.
  7. Pour filling over the baked crust and return to the oven.
  8. Bake for 25 to 30 minutes until the filling is set and lightly golden.
  9. Let cool in the pan, then cut into bars.
Notes
  • I wonder if you could add a little brown sugar on top and put in broiler for a few minutes to caramelized it, and make like a pineapple upside down effect.
