Grilled Cheese w/Havarti, Brussel Sprouts, and Apple
Ingredients
  • 1 t olive oil
  • 1 T chopped shallot
  • 2 c (6 oz) thinly shredded Brussels sprouts
  • ¼ t salt
  • Freshly ground black pepper
  • Olive oil spray (such as Bernoulli) or a mister
  • 4 slices whole wheat Tuscan bread (1 oz each)
  • 4 oz light Havarti cheese, shredded
  • 2 Granny Smith apples, halved and cut into ⅛-inch-thick slices
