Easy Blueberry Cake
Ingredients
  • 1 ½ c plus 1T flour, divided
  • 1 tsp baking powder
  • ¼ tsp kosher salt
  • ½ butter, softened
  • ¾ c sugar, divided
  • 2 eggs, separated
  • 1 tsp vanilla
  • ⅓ c milk
  • 1 ½ c blueberries
  • 1 T coarse sugar (turbinado), optional.
Steps
  1. Preheat oven to 350; grease 8" square pan.
  2. Stir 1 ½ c flour, baking powder and salt in a bowl. In separate bowl, beat butter with mixer till smooth, add in ½ sugar. Beat in egg yolks and vanilla. Add flour mixture and milk, alternately, beating on low after each addition until just combined. Toss blueberries with 1 T flour, then fold into batter.
  3. Beat egg whites till soft peaks, beat in ¼ c sugar. Stir in a third into batter, then fold the rest in.
  4. Pour into pan, top with sugar. Bake till pick comes out clean, around 50 minutes.
