Ingredients
  • 1 can kidney beans, drained
  • 2 TBSP taco sauce
  • 1 TBSP butter or margarine
  • 1 PKG taco or Mexican rice
  • 1 lb ground beef
  • 1 package (or equivalent) Taco seasoning
  • 2 cups shredded cheddar cheese or Mexican blend cheese
Steps
  1. Cook ground beef and season with taco seasoning. Cook rice per package instructions.
  2. Preheat oven to 350° F.
  3. While beef and rice are cooking, puree kidney beans with taco sauce and butter.
  4. Spread bean puree in the bottom of a 9x9 oven safe pan. Layer rice on top of the beans. Top with 1 cup of cheese. Layer beef on top of cheese. Top with remaining cheese.
  5. Bake until cheese is golden, about 10 minutes.
  6. Serve with salsa, guacamole, tomatoes, onions, or whatever your favorite toppings are.
  7. Dig in with a spoon or chips!
