Thai Peanut Beef (Tips, Tricks, Freezer Instructions)
Ingredients
  • 1 ½ pounds flank steak cut across the grain into ⅛ thin slices then cut into 2” length pieces
  • 1 20 oz. can pineapple tidbits, drained
  • 5 cups broccoli, cut into bite size pieces
  • ¼ cup water
  • ½ cup crunchy peanut butter
  • ½ cup roasted peanuts, chopped
  • green onions for garnish (optional)
  • peanut oil (may sub olive oil)
  • subheading: MARINADE/SAUCE:
  • ⅓ cup low sodiuim soy sauce
  • ¼ cup brown sugar
  • 2 tablespoon lime juice
  • 2 tablespoons fish sauce
  • 2 teaspoons freshly grated ginger
  • 5 garlic cloves, minced
  • 2 to 4 teaspoons Sriracha/Asian hot chili sauce
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch
