Red Lentil Flatbread

  • My first post and I’m so happy to share this. I took out the salt and oil from an online recipe from Cook with Joy (episode 33) added some spices and viola - delicious flatbread. I soaked 1 cup of red lentils overnight in enough water to cover them, then drained and rinsed them. Preheated the oven to 425°. Placed lentils in a food processor along with almost ½ cup water (you can use the whole amount if you like), added three large garlic cloves, ½ teaspoon baking powder, two teaspoons of onion powder and a few good shakes of smoked paprika. Blended until smooth. Poured onto a cookie sheet with a Silpat on it and smoothed it out. Baked for around 25 minutes and it was done. Easy to make and tastes so good with my homemade hummus. It seems to be soft in the center parts but strong enough to hold hummus. It would be easy to change up the spices and zap the tastebuds. Great way to eat your pulses..... I’m going to make pizza with it later..... She also made this flatbread with split peas and other lentils.... go wild with the possibilities....
