Chicken Pot Pie Casserole (Dairy-Free)
  • SCALE 1x 2x 3x
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 1 yellow onion, peeled and chopped
  • 4 garlic cloves, minced
  • 3 celery stalks, chopped
  • 3 large carrot sticks, chopped
  • ½ teaspoon each garlic powder and onion powder
  • ¼ cup gluten-free all-purpose flour
  • 1 ½ cup non-dairy milk (I used full-fat coconut milk)
  • 1.5 cups cooked rice (I used basmati rice)
  • 1 cup frozen peas
  • 1 lb cooked chicken, cubed (rotisserie chicken in a great hack for this!)
  • 3 cups chicken broth
