Tortilla recipe in the notes
Ingredients
  • 1 cup un soaked pinto beans picked through and rinsed
  • ½ cup of diced onions
  • 2 jalapeños, I didn't have fresh so I used a small can
  • 2 Clovis of chopped garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 slices of applewood bacon chopped
Steps
  1. Sauté the bacon for a few minutes
  2. add the onions and continue to sauté
  3. Add the jalapeños, garlic, salt, pepper and sauté.
  4. Deglaze the pot with a little water
  5. Add the beans and cover with 2" of water..I used ham hock broth
  6. Close and seal your pot
  7. Set your pot to Manual 55 minutes
  8. When the cooking is complete allow for at least a 15 minutes NPR
  9. Drain the beans and reserve the liquid
  10. Mash or use a stick blender, add some of the reserved liquid to get the desired consistency.
  11. Taste and add more salt if needed
Notes
  • I'll use the reserved liquid to make rice or I'll freeze it to make the next batch of beans
  • I also make homemade tortillas and use them for tostadas, soft tacos and burritos
  • By adding some store bought salsa you'll have a pretty good bean dip
  • Tortilla recipe
  • 3.5 cups of AP flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup shortening..( for thin soft tortillas use ½ cup of vegetable oil instead of the shortening)
  • 1 cup hot water (115 degrees)
  • In a large bowl mix the first 3 ingredients ..stir to distribute
  • Add all of the shortening in teaspoon dollops and cut it into the flour
  • Make a well in the flour and pour the water in. Using a wooden spoon slowly stir the flour and water together. When it starts to form a dough use your hands to finish incorporating the flour.
  • Turn the dough out onto a floured surface and knead for a few minutes..( do not over knead)
  • Cover and let it rest for about 15 minutes
  • Stretch and roll the dough into a log about 15" long . Cut it in half then cut each piece in half. Continue until the whole log is cut up
  • Flour your work surface. Flour both sides of one piece of dough on your floured surface. Press the piece flat with your palm. You can either use a rolling pin to make your tortillas or use a tortilla press. Continue to make your tortillas until all the pieces are done.
  • Heat a large skillet over medium high heat. When the skillet is hot add one tortilla and cook until bubbles appear, flip and cook the other side for about a minute.
  • These are going to be thick tortillas..good for tostadas and eating with your meals or snacking.
  • For soft tortillas...use ½ cup of vegetable oil instead of shortening and only 1 teaspoon on baking powder
