Vegetarian Red Beans and Rice {A Meatless Monday
Ingredients
  • 2 Tablespoons extra virgin olive oil
  • 1 cup white onion diced
  • ½ cup stalks celery diced
  • 1 large red bell pepper diced
  • ½ cup carrots diced
  • 6 garlic cloves minced
  • 1 bay leaf
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Kosher salt and fresh cracked black pepper to taste about 1 teaspoon of each
  • ½ teaspoon crushed red pepper
  • 1 pinch cayenne pepper (optional) or more if you like it spicy!
  • 1 tablespoon red wine vinegar
  • 2 cans cooked red beans drained and rinsed (15.5-ounce cans)
  • 1 ½ cups vegetable broth
  • cooked rice for serving
  • fresh flat-leaf parsley or cilantro for serving
