Ukrainian beet and potato salad
Ingredients
  • 2 medium-large beets, cooked and diced

  • 2 medium-large potatoes, cooked and diced

  • 2 medium-large carrots, cooked and diced

  • ¾-cup sauerkraut, rinsed drained well (can be omitted)
  •  
  • 2 large dill pickles, diced
  •  
  • 1 small shallot (you can also use ¼ of a red or yellow onion), finely minced
  •  
  • salt, ground black pepper, to taste
  •  
  • ¼ - light oil, avocado or your preference
  •  
  • 2 Tablespoons pickle juice
  •  
  • 2 to 3 Tablespoons fresh dill minced
