Campfire Casserole

Born and raised in New Orleans, Louisiana (known for some of the best food in the world) I have a mixture of personal recipes as well as some favorites I've found along the way.

Smoked sausage, yellow potatoes, sweet corn, barbecue sauce and cheddar made in your Instant Pot or Crockpot.

1 Tbsp olive oil

6 ounces beef smoked sausage, sliced

½ cup sliced onion

2 cloves of garlic, minced

½ cup chicken broth

2 medium yukon gold potatoes (about 14 ounces), cut into half inch cubes

½ tsp pepper

¼ tsp kosher salt

¼ cup barbecue sauce

½ cup frozen sweet white corn

½ cup shredded cheddar cheese
