Ingredients
  • The "mince" is chopped onion, capsicum, mushrooms, grated carrots, tin of tomatoes, tin of brown lentils, some frozen spinach, ¼ cup uncooked quinoa oregano, garlic, pepper, water, tomato paste and (optional) red wine (or use more water, and a little dash of soy milk. Pan fry the veggies then add everything else and simmer. If thickens up too much, add more water. I just kept tasting as I went - add as much garlic and oregano as suits you.
  • This mince (without the wine) is a GREAT base. On rice, in burritos, add curry powder and a little peanut butter and soy milk and turn it into a curry. Loaded with veggies but the veggies are truly not noticeable (especially if you cut them small enough).
  • Anyways....my fiance loved the food. Full belly. Eating soup and fruit first has really helped with calorie density for him. And he enjoys it.
