No-Stress Chicken & Rice
Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 1 ½ pounds chicken thighs or chicken breasts, boneless and skinless, cut into 1-inch-thick pieces
  • salt, to taste
  • ground black pepper, to taste
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and shredded
  • 2 celery stalks, chopped
  • 1 tablespoon garlic, minced
  • 2 cups chicken broth
  • 1 ½ cups jasmine rice, uncooked and rinsed
  • ½ cup parmesan cheese, shredded or grated
  • ⅓ cup fresh parsley, chopped
