- 4 garlic cloves , minced
- 1 tbsp fresh rosemary , finely chopped
- 4 tbsp extra virgin olive oil
- ½ tsp salt , cooking/kosher salt
- ¼ tsp black pepper

- 2 tbsp olive oil - for searing (1 tbsp each rack)
