Baked Croque Monsieur Breakfast Prep! Add an Over-Easy Egg When Serving to Make It a Madame.
Baked Overnight Croque Monsieur for 185 calories apiece (245 including over easy egg). Inspired by a Nigella Lawson recipe.

Ingredients
  • 6 pieces light bread (I used Schmidts)
  • 75g dijon mustard
  • 6 slices reduced fat Swiss cheese
  • 103g smoked ham (6 slices thin sliced)
  • 276g egg beaters or liquid egg white (equivalent to 6 eggs)
  • 80mL unsweetened almond milk
  • 28g shredded gruyere
  • Worcestershire sauce
Steps
  1. Spread mustard and put a piece of cheese on each piece of bread and make 3 sandwiches with ham in the middle. Cut sandwiches into triangles and place in a greased 7”x11” baking dish.
  2. Whisk egg beaters, milk, salt & pepper, pour over sandwiches, cover and let sit overnight in fridge.
  3. In the AM, heat oven to 400F and sprinkle with gruyere and a few dashes of Worcestershire sauce. Bake uncovered 25 min.
