Tuna Cakes with Apple & Walnut Salad
Ingredients
  • 13⁄4 cups cooked brown rice
  • 1 cup baby spinach, roughly chopped
  • 1 medium zucchini, grated and excess water squeezed out
  • 400g tin tuna in spring water, drained
  • 2 large eggs, lightly beaten
  • 1⁄4 cup chia seeds
  • 2 tbs plain flour (or gluten-free if required)
  • 1⁄4 cup finely grated parmesan
  • zest and juice of a lemon
  • 2 tbs chopped parsley
  • salt & pepper, to taste
  • subheading: SALAD:
  • 1 baby cos lettuce leaves, leaves picked
  • 1 Lebanese cucumber, sliced
  • 1 red apple, julienned
  • 20g walnuts, roughly chopped
  • subheading: DRESSING:
  • 2 tbs Greek yoghurt
  • 1 tbs chopped parsley
