Fried Spare Ribs in Chinkiang Style
Ingredients
  • 小肉排 2 磅- 2 lbs of spare rib. Cut into 1-inch sections
  • 3 大片 - 3 slices ginger
  • 冰糖 1 大粒 - 1 chunk of rock sugar
  • 鎮江醋半杯 - ½ cup of Chinkiang vinegar
  • 紹酒 6湯汤匙 - 6 tbsp of Shaoxing cooking wine
  • 老抽 1.5 湯匙 - 1 ½ tbsp of dark soy sauce
  • 雞粉1湯匙 (用否隨意) - 1 tbsp of Chicken powder (Optinal)
  • 白胡椒粉少許 - Pinch of white pepper powder
  • 芝麻油少許 - Pinch of sesame oil
  • 白芝麻粒少許 - Pinch of roasted white sesame
  • 清水半杯 - Half cup of water
