Thai Red Curry with Vegetables
Ingredients
  • 1 teaspoon oil

  • 1 cup carrot -chopped
  • 1 zucchini cubed
  • 1 teaspoon ginger minced
  • 1 teaspoon garlic minced
  • 2 tablespoon Thai Red Curry Paste
  • 1 tablespoon liquid coconut amino
  • 1 tablespoon rice vinegar
  • 1 tablespoon raw or brown sugar
  • 1 13.5 fl oz can of full fat coconut milk
  • 2 cup water
  • 1 tablespoon lime juice

  • 5 to 6 stalks green onions chopped
  • 1 tablespoon thai basil leaves chopped
  • 1 tablespoon cilantro leaves chopped
