Cod Fillet over Pesto Risotto
Ingredients

  • 1 Tbsp. butter

  • 1 ½ cups water
  • salt and pepper to taste
  • ½ cup, plus 1 Tbsp. Fresh Basil Pesto Sauce
  • subheading: For Lightly Fried Cod Fish Fillets:
  • 1 pound fresh cod fillets (about four 2-inch pieces)
  • ¼ cup all-purpose flour
  • 2 eggs- lightly beaten
  • salt and fresh cracked pepper
  • ¼ cup canola oil, for frying
