  • 180g pork tenderloin or shoulder
  • 2 medium green capsicums
  • 3 tbsp vegetable oil
  • 3 thin slices ginger, unpeeled
  • 2 garlic cloves, roughly chopped
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp soy sauce
  • a good pinch of sugar
  • 1 tsp cornflour or potato starch, mixed with ¼ cup of water
  • subheading: MARINADE:
  • 1 tsp soy sauce
  • ½ tsp sugar
  • 1 tsp cornflour or potato starch
  • ¼ tsp of bicarbonate of soda
  • ½ tbsp Shaoxing wine
  • 2 tsp vegetable oil
