One Pot Chicken and Brown Rice Bake
Ingredients

  • 1 red bell pepper finely diced
  • 4 garlic cloves minced
  • 1 tbsp all-purpose flour or arrow root powder for gluten-free version
  • 1½½ cups chicken bone broth or chicken broth
  • ⅓ cup heavy cream
  • 1½ cups freshly shredded parmesan cheese divided into 1 cup + ½ cup set aside
  • 1½ cups frozen sweet peas
  • 3 cups shredded pre-cooked roasted, pressure cooked, or rotisserie chicken
  • ½ tsp poultry seasoning
  • salt and pepper to taste
