Ingredients
  • 2 cups butternut squash (or summer squash) cut, peeled and cubed
  • 2 medium carrots or about 10 baby carrots
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 cups vegetable broth or water
  • ¼ cup nutritional yeast
  • ½ tsp onion powder
  • ½ tsp paprika or smoked paprika
  • ⅛ tsp turmeric
  • 1 tsp lemon juice
  • 1 cup raw cashews or 1 ¼ cup potatoes peeled and cubed, or 1 can of white beans drained and rinsed.
  • ½ tsp salt or to taste (The amount needed will depend on sodium in your broth and personal preference.)
