Ingredients
  • 200g (7oz or 1 level cup) white sugar and 2 teaspoons of coffee dissolved in 200ml (6oz or ¾ cup) boiling water. Set aside.
  • 124g (4oz) soft butter
  • 60g (2oz) white sugar
  • 1½ teaspoons lemon juice
  • 1 teaspoon vanilla
  • 2 eggs
  • 300g (10oz or 2½ level cups) Self Raising flour, sifted with 1 level tablespoon powdered milk.
  • Allow sugar, coffee syrup to become cold
  • Cream butter, sugar, lemon juice and vanilla essence
  • Add eggs with 2 heaped tablespoons of sifted flour and beat for 3mins.
  • Start adding remaining flour and cold syrup alternately, beating well after each addition
  • Pour mixture into a 20cm greased cake tin and bake in a moderate oven 40 to 50mins
  • Allow to stand for 5mins before turning out. Cool.
  • Coffee Icing
  • 125g (4oz) butter
  • 225g (8oz) icing sugar
  • 1 teaspoon coffee
  • ½ tablespoon milk
