Souvlaki is a popular fast food option in Greece and involves grilling meat on a skewer before stuffing into flatbreads with salads and sauces. In this version, hunks of pork shoulder are first marinated in oil, lemon, oregano, cumin, paprika and garlic.

Ingredients
  • 500g pork shoulder, cut into bite-sized cubes
  • 2 tbsp extra-virgin olive oil
  • 1 lemon, zested and juiced, plus extra to serve
  • 1 tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 garlic cloves, crushed
  • 2 Little Gem lettuces, shredded
  • 1 red onion, thinly sliced
  • 4 tomatoes, sliced
  • tzatziki, to serve
  • 4 pittas or flatbreads, to serve
