Mediterranean Beef-Stuffed Bell Peppers
Ingredients
  • 1 lb. lean Ground Beef
  • ½ medium red onion, chopped
  • 1 (8 oz.) can tomato sauce
  • ½ tsp. ground cinnamon
  • 1 tsp. Kosher salt
  • ¼ tsp freshly ground black pepper
  • 1 (15 oz.) can chickpeas, rinsed, drained, and mashed with a fork
  • 1 ½ cups cooked brown rice
  • ½ cup pitted kalamata olives, halved or roughly chopped
  • ¼ cup fresh parsley, chopped
  • Olive oil spray
  • 6 large bell peppers, halved with stems and seeds removed
  • ¼ cup crumbled feta cheese
  • 3 Tbsp. toasted pine nuts
