BAKED MEATBALLS WITH CIABATTA
Ingredients
  • 1 onion finely chopped
  • 3 garlic cloves crushed
  • 1 tsp olive oil
  • 200g pork mince
  • 200g beef mince
  • 1⁄4 cup (25g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)
  • 3 sprigs of fresh thyme leaves picked
  • salt & pepper, to taste
  • subheading: Tomato Sauce:
  • 1 tsp olive oil
  • 4 garlic cloves crushed
  • 2 tins of diced tomatoes (400g tins)
  • 1 cup (250ml) vegetable stock
  • 1 sprig of fresh basil roughly chopped
  • subheading: Topping:
  • 1⁄3 cup (40g) mozzarella grated
  • 2 tbs (20g) parmesan grated
  • 1 sprig of fresh basil leaves picked
  • 4 thick (70g) slices ciabatta (or gluten free) grilled
