Easy Take Out Lemon Chicken
This is a very healthy, tasty and easy recipe. It also freezes well.

Ingredients
  • 1 lb Chicken Breast cut into bite size pieces
  • ½ Tsp Garlic powder
  • Pepper to taste
  • 2 Cups Snow peas (optional)
  • 1 Red Bell Pepper cut into bite size pieces
  • 1Package Sugar free Lemon Jello mix
  • Zest if 1 Lemon
  • Juice of 1 Lemon
  • 1 Tbsp Corn starch
  • 1 Cup cold water
Steps
  1. Season chicken with garlic and pepper.
  2. On medium heat, cook chicken until no longer pink, about 5 minutes.
  3. Meanwhile in a small bowl mix together water, corn starch, lemon juice, lemon zest and jello. Set aside.
  4. Once chicken is cooked, add red peppers and snow peas (if using), cook for 2 to 3 minutes until tender.
  5. Add sauce, cook an additional 2 to 3 minutes or until sauce thickens.
  6. Serve over rice if desired.
