Sweet Potato Souffle - Lou Smith, Bartow FL
Ingredients
  • 2 - 29 ounce cans sweet potatoes
  • or
  • 4 to 5 medium sweet potatoes baked and scooped
  • ½ C sugar
  • 2 eggs
  • ¾ stick butter
  • 1 small can evaporated milk
  • ¼ tsp nutmeg
  • ½ tsp ground cinnamon
  •  
  • subheading: TOPPING:
  • ¾ stick butter
  • ½ C brown sugar
  • ½ C chopped pecans
  • ¾ C crushed corn flakes (or Frosted Flakes)
Steps
  1. Mash potatoes, the add other ingredients and whip well.
  2. Combine topping ingredients and cover top of potatoes
  3. Bake at 300° for approximately 35 minutes
