American Chop Suey (Macaroni, Beef, and Cheese Skillet Casserole)

  • 1 pound 80/20 ground beef
  • 2 tablespoons Worcestershire sauce, plus more for serving
  • 1 cup homemade or store-bought low-sodium chicken stock
  • Freshly ground black pepper
  • 1 pound low moisture whole milk mozzarella cheese, cut into ½-inch cubes
  • 3 ounces roughly grated Parmigiano-Reggiano
