Simple Chicken Quinoa Casserole

Ingredients
  • 4 Yellow Containers of Cooked Quinoa
  • 3 Red Containers of Shredded or Chopped Cooked Chicken
  • 1 Red Container Greek yogurt
  • ¼ cup water
  • ½ cup Chicken Broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup, plus 1 tablespoon divided, hot sauce (Tabasco, Crystal Hot Sauce or something similar)
  • 3 Blue Containers shredded cheddar cheese
  • 1 Blue Container crumbled blue cheese (can sub feta or more cheddar cheese)
  • Green Onions, sliced
Steps
  1. Cook quinoa according to package instructions. Set aside.
  2. Preheat oven to 375° degrees.
  3. In a large bowl mix cooked quinoa, greek yogurt, water, chicken broth, chicken, garlic powder, onion powder, ¼ cup hot sauce, 1 cup shredded cheddar cheese, salt, and pepper.
  4. Stir well to combine.
  5. Transfer mixture to a baking dish coated with cooking spray.
  6. Top with remaining - - ½ cup of shredded cheddar cheese.
  7. Bake for - - 20 minutes.
  8. Remove from oven, drizzle the remaining 1 tablespoon hot sauce, top with blue cheese crumbles (or feta) and return to oven for 2 to 3 more minutes to melt the blue cheese.
  9. Top with green onions.
Notes
  • Need a GREEN CONTAINER?  Serve with celery sticks or on a bed of greens.
