Ingredients
- 4 Yellow Containers of Cooked Quinoa
- 3 Red Containers of Shredded or Chopped Cooked Chicken
- 1 Red Container Greek yogurt
- ¼ cup water
- ½ cup Chicken Broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ cup, plus 1 tablespoon divided, hot sauce (Tabasco, Crystal Hot Sauce or something similar)
- 3 Blue Containers shredded cheddar cheese
- 1 Blue Container crumbled blue cheese (can sub feta or more cheddar cheese)
- Green Onions, sliced
Steps
- Cook quinoa according to package instructions. Set aside.
- Preheat oven to 375° degrees.
- In a large bowl mix cooked quinoa, greek yogurt, water, chicken broth, chicken, garlic powder, onion powder, ¼ cup hot sauce, 1 cup shredded cheddar cheese, salt, and pepper.
- Stir well to combine.
- Transfer mixture to a baking dish coated with cooking spray.
- Top with remaining - - ½ cup of shredded cheddar cheese.
- Bake for - - 20 minutes.
- Remove from oven, drizzle the remaining 1 tablespoon hot sauce, top with blue cheese crumbles (or feta) and return to oven for 2 to 3 more minutes to melt the blue cheese.
- Top with green onions.
Notes
- Need a GREEN CONTAINER? Serve with celery sticks or on a bed of greens.
