Mexican Pinto Bean Soup
Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ancho chile powder
  • 4 cups Chicken or vegetable broth
  • 3 (14 ounce or 400 ml) cans pinto beans, drained and rinsed
  • 1 large can fire roasted tomatoes
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Bacon bits and diced ham if desired
