Hash Brown Egg Cups
These Hash Brown Egg Cups are perfect for meal prep!
If you’re looking for a grab and go breakfast you will want to make these.
These hash brown egg cups are filled with ham, green pepper and onion. But you can use any ingredients you want.
Instead of ham you could do sausage or bacon or linguicia. You could also change out the vegetables too.
Ingredients
  • 3 cups Ore Ida hash browns, thawed
  • ½ cup diced ham (I used Kroger brand which was 1 point for ½ cup)
  • ¼ green pepper, chopped
  • ½ small onion, chopped
  • 5 eggs
  • ⅛ teaspoon garlic powder
  • Salt and pepper, to taste
  • ¾ cup reduced fat Mexican cheese, shredded
