Servings: 8” cast iron
Ingredients
  • 2 cups cornmeal
  • 1 stick melted butter
  • 2 eggs
  • Tsp salt
  • 4 to 6 Oz cheddar cubes
  • 2tbsp oil
  • 1 cup Buttermilk
Steps
  1. Preheat oven to 375 with cast iron in oven
  2. Beat eggs in separate bowl with some buttermilk. Add all ingredients together. Add. Buttermilk until pretty liquid
  3. Add oil to pan and pour in mixture.
  4. Batter should sizzle
  5. Bake at 375 until it sets
  6. Remove and let sit out a while
