Mushroom, Corn and Bacon Chowder

  • ½ teaspoon dried thyme
  • ½ teaspoon dried dill
  • ¼ cup all-purpose flour
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 pound red potatoes, diced
  • 2 cups baby spinach
  • 1 cup corn kernels, frozen, canned or roasted
  • ½ cup half and half, or more, as needed*
  • Kosher salt and freshly ground black pepper, to taste
