Roasted Szechuan Cabbage
Ingredients
  • 1 big cabbage (hispi, January king etc)
  • 50ml neutral oil
  • 2 tbsp flaked sea salt
  • 2 cloves garlic
  • 3 tbsp Chinese roasted tahini
  • 2 tbsp Chinkiang vinegar
  • 2 tbsp light soy sauce
  • 1 tbsp honey
  • another 50ml
  • subheading: neutral oil:
  • 1 tsp roasted sesame oil
  • 2 tbsps crispy chilli flakes in chilli oil
  • 4 spring onions, greens only
  • ½ tbsp toasted sesame seeds
  • Twisted'd Roasted Szechuan Cabbage recipe is unlike any other. Normally, cabbage gets a bad rep. Soggy, smelly, reminiscent of steamy lugubrious school dinners. Maybe British people don't give it the love it deserves, because it's very easy to make cabbage nice. Roast it, chuck some butter on it, yes please matron. Or try this recipe. It's really good!
