Ingredients

  • 1 brown onion, finely diced
  • 4 cloves garlic, crushed
  • 1 red capsicum, diced
  • 2 teaspoons paprika (sweet or smoked or a blend)
  • Salt and freshly ground black pepper
  • 800 grams fresh ripe tomatoes, roughly diced (or 800g canned peeled crushed tomatoes)
  • 6 large eggs
  • Grated cheddar cheese, or feta crumbled
  • Fresh parsley, roughly chopped
