Classic Pasta Alla Gricia

Julia Child,is a goddess of the kitchen and I vow to someday cook her iconic Boeuf Bourguignon.

4 oz. thick cut bacon, diced into ¼" pieces

¾ tsp. freshly ground black pepper

4 c. water

¾ tsp. kosher salt

8 oz. tagliatelle

1 ½ c. freshly grated Pecorino Romano, divided, plus more for serving
