Slow Cooker Butternut Squash and Farro Chili
I didn’t use the cumin. Half teaspoon of chili powder; try 1 teaspoon next time. Don’t add any cinnamon. Greg likes.
Ingredients
  • 2 lbs butternut squash, peeled and diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 5 garlic cloves, minced
  • 2 (15 oz) cans diced tomatoes
  • 3 tablespoons tomato paste
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can cannellini beans, drained
  • 1 ½ cups low-sodium vegetable broth
  • 1 cup farro, rinsed
  • 1 tablespoon chili powder
  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
