  • 1 apple, cored and quartered
  • 1 cup dry white wine
  • 1 cup turkey or chicken stock
  • subheading: Cider Pan Gravy:
  • ¼ cup fat from drippings
  • ⅓ cup Wondra or all-purpose flour
  • ½ cup dry white wine
  • ½ cup apple cider
  • 3 cups turkey or chicken stock
  • salt and pepper to taste
