12 large eggs - lightly beaten

¼ cup whole milk

½ tsp kosher sea salt

¼ tsp ground black pepper

¼ tsp paprika

8 (8 inch) flour tortillas

1 cup ham - cubed, (or chopped sliced ham)

1 cup cheddar cheese - shredded

1 cup monterey jack cheese - shredded
