Ingredients
  • ¼ cup vegetable oil or more
  • 2 to 2 ½ pounds beef flank steak , skirt or roast
  • salt , pepper, cumin and Sazon (adjust to taste)
  • 1 large bay leaf
  • 1 Large Onion , sliced
  • 4 to 5 cloves garlic , minced
  • 2 bell peppers (red, green), seeded and sliced into strips
  • 2 tomatoes sliced into strips
  • 1 can (8 ounce) can tomato sauce
  • 1 thyme spring
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 to 2 cup beef broth
  • 1 to 2 packet Sazon (sub beef or chicken bouillon)
  • 2 to 3 Tablespoon parsley/cilantro
  • salt and pepper to taste
