Saucy Pollo Guisado
Ingredients

  • 1 tsp. ground turmeric
  • 1 tsp. paprika
  • 8 skin-on, bone-in chicken thighs (about 3 lb.)
  • 1 Tbsp. extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 Tbsp. tomato paste
  • 1 8-oz. can tomato sauce
  • 2½ cups low-sodium chicken broth
  • 1 cup pitted manzanilla olives
  • Kosher salt
  • Steamed rice, cilantro leaves with tender stems, and lime wedges (for serving)
