  • 4 low-carb whole wheat tortillas (I used La Tortilla Factory, 7- to 8-inches each
  • ½ cup shredded pepper Jack cheese, 2 oz total
  • Olive oil spray
  • 3 cups shredded lettuce
  • 4 tablespoons sour cream
  • 4 ounces avocado, from 1 small Hass, diced
