Creamy Cauflower

Ingredients
  • 1 Cauliflower Head
  • 4 oz Potatoes (with peel)
  • 2 Tbsp Plain Oikos 0% fat Greek Yogurt
  • 2 tsp Coconut Oil (with butter flavor)
  • ½ tsp Sea Salt
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ⅛ tsp pepper
Steps
  1. Clean cauliflower and separate into chunks. Cut potatoes into chunks. Put 1 cup water into PC. Put all veggies into steamer basket and place in PC. Seal PC and close steam vent. Set timer to 6 minutes. NPR.
  2. Open cooker and lift out steamer basket. Put veggies into a bowl. Add oil, yogurt, and seasonings. Mash thoroughly or use an emersion blender.
Notes
  • 08-08 to 2020 added 4 oz of reduced fat cream cheese (11 fp)
  • 04 oz raw potato = 3 fp
